Take a pan, add 1&1/2 tbsp ghee and heat it....

Then add sooji & roast it for 2-3 minutes until it turns to light pink colour...

Then add milk in the sooji & mix it well until it becomes thick & dry..

Now take it out in a bowl & cool it down

Now take a pan & make syrup, take 1 cup sugar & water- boil it & cook till it dissolves the sugar competely

Now add cardamom & saffron & mix it well in a low flame for 2-3 minutes

Once the sooji is cooled, add 1 tsp sugar & knead well till it becomes smooth and soft

Now make small balls, roll into smooth ball so that it doesn't crack..

Heat oil for deep frying, drop ball on medium hot oil & fry till becomes golden brown

Now, Drain the balls & add immediately into the syrup...let it soak for 60 minutes

Now, garnish the gulab jamun with dry fruits like pistachio

Your sooji's gulab jamun is ready to eat...serve it
