Ever since navaratri has begun, sago/tapioca kheer is one among common preparation done during these nine fasting days. In order to make this navaratri a special one, thought of transforming “kheer” into a modern version “pudding”. Tapioca helps in enriching red blood cells, digestion in check, aiding bone and muscle check.
Went through lot of dilemma in order to tick the flavors in using the tapioca/Sabudana, and finally made up with rose essence and carrots, the satisfaction was not over, until I felt, that first spoon of tapioca pudding which was delighted with the flavours of cardamom and rose…now let us know how this delicious pudding is done..

1. In a large pot, soak Tapioca/sabudana for about an hour.

2. In a heavy bottomed pan add ghee and grated carrots.

3. Sauté for about 4-5 minutes.

4. Add sugar, jaggery and stir well.

5. Once it combines, add fresh thick milk and stir well.

6. Boil the mixture and leave until it's half reduced.

7. Add in soaked sago/tapioca and stir well.

8. Add in the cardamom, rose essence, almonds and mix well.

9. Bring to a boil and leave the mixture to room temperature.

Transfer this pudding into a small mini glass or a bowl and garnish it with chopped almonds, rose petals and some walnuts.

You can serve this pudding chilled or warm.just delicious.
