Soak the soya chunks in warm water until it turns soft. Squeeze out excess water and set aside.

Fry off star anise, bay leaf, cinnamon, cloves, cardamoms in oil. When they turn aromat add the onions, garlic, ginger & green chillies. Fry till they brown.

Then add the tomatoes and the rest of the chopped veggies. Cover & cook until they soften. Once done grind them to a smooth paste.

Put the paste in the pan with oil, add the soaked soya chunks to this. Add salt, turmeric, chilli powder & curd. Mix well. Cover and cook until it all softens.

Add the basmathi rice to this veggie mix, pour a cup of water. Cover the cooker & Let it boil for 10-15 mins. Once the rice has boiled well, mix together all the ingredients gently without breaking the rice grains. Add garam masala/biryani masala at this stage & mix.

Garnish with roast cashews & coriander. Serve hot with onion raita.
