Tomato Sauce

This healthy, flavorful tomato sauce is a staple in many dishes and is really simple to make. Lots of herbs and seasonings make it so delicious that my family prefers this over anything store bought.

You can use whatever onion you have on hand. Sometimes I like using a sweet onion, other times I mix in some red, so go with whatever’s available and what you like.

As always, use recipes as a guideline and feel free adjust the spices to suit your preferences. For example, add more red pepper flakes to add some heat, or more sugar to make it sweeter.

Tomato Sauce

Ingredients

  1. 5 canscrushed tomatoes
  2. 4 tbsolive oil
  3. 6garlic cloves
  4. 3shallots
  5. 1yellow onion
  6. 1 tspbasil
  7. 1/2 tspthyme
  8. 1/2 tsprosemary
  9. 1 tbsparsley
  10. 1/8 tsporegano
  11. 1/4 tspbrown sugar
  12. 1/4 tspred pepper flakes
  13. 1 1/4 tspsalt
  14. Pinchblack pepper

Cooking Instructions

    Mince the garlic, shallots, and onion. Open the tomato cans

    Pour the olive oil in the sauce pot and get heated over medium flame. Put in onion and shallots and cook, stirring occasionally, for about 7 minutes.

    Turn down to low-medium heat and add garlic, mixing it well with the onions and shallots. Cook for 3-4 minutes.

    Add the cans of crushed tomatoes, making sure to scrape out all the goodness from the cans. Then add 1/2 cup of water to the pot and mix well.

    Add the spices and stir well.

    Cover the pot and cook for 1.5 hours over a low flame. ••• Every 20 mins or so, stir thoroughly, making sure to incorporate everything that’s settled at the bottom of the pot. Give a taste test about 40 mins in and see if you want to add more of any spice.
