Take maida in a bowl. add thyme,salt,oiland rub with ur hand and mix well.p
now add water little by little and knead a hard dough.it is like smosa dough.
keep aside for 30 minutes cover with wet cloth. - 2
Heat oil in a pan and add zeera,when crackled add all other ingrediends and fry for 3-4 minutes
Add potatoes.add cornflour in potatoes mixture.cool it - 3
Make balls and roll very thin roti on rolling board
now put aloo mixture in the middle of roti and roll it and make a roll.
u can make as big roll as u like - 4
Now cut the roll in small pieces.it is ready to fry. Heat oil in a pan fry samosas on law heat. Fry half and put in the fridge for 15 days
