Potato Fenugreek Stir Fry

This is one of easiest recipe of potatoes where the flavour of methi dominates the entire dish. It is commonly known as "methi diye alu chochhori", in Bengali. This can be served in your breakfast, as a side dish or accompaniment of any Indian breads.

Steps

Heat some oil in a wok.

Add the fenugreek seeds and let it splutter.

Add the potatoes and saute it well.

Add some salt and saute it for 5mins.

Add the green chillies and tomatoes.

Mix them well and cover it with a lid. Keep the flame to medium.

Saute it in between and again cover it with a lid.

Repeat the process till the potatoes are cooked well.

Once cooked, increase the flame and fry till potatoes are light brown in colour.

Remove it from the flame and serve hot with freshly made paranthas and a rasogolla. Your festive morning will be sorted.
