Ingredients

  • 2.2 lbs (1 kg)Mi Quang noodles (adjust amount as needed)
  • 1free-range chicken, about 2.2 lbs (1 kg)
  • A fewsmall shallots (or pearl onions) + peanut oil, turmeric powder
  • 2 cartonsfresh coconut water
  • Peanuts
  • Greens: young mustard greens, mint, lettuce, fish mint, banana blossom

Steps

  1. 1

    Cut the chicken into bite-sized pieces. Marinate with fish sauce, salt, chicken bouillon powder, minced shallots, turmeric powder, and sliced red onion. Heat a large pan, add peanut oil or vegetable oil, and sauté the shallots until fragrant. Add the chicken and stir-fry until the flavors are absorbed.

    In a large pot, pour in the fresh coconut water and bring to a boil. Add all the chicken from the pan into the pot and bring to a boil again. Season to taste.

    Wash all the greens and mix them together. Toast the peanuts until fragrant, then crush them lightly.

    Mi Quang is best served with a side of fish sauce mixed with chili and garlic to bring out its rich flavor.
