Cut the chicken into bite-sized pieces. Marinate with fish sauce, salt, chicken bouillon powder, minced shallots, turmeric powder, and sliced red onion. Heat a large pan, add peanut oil or vegetable oil, and sauté the shallots until fragrant. Add the chicken and stir-fry until the flavors are absorbed.

In a large pot, pour in the fresh coconut water and bring to a boil. Add all the chicken from the pan into the pot and bring to a boil again. Season to taste.

Wash all the greens and mix them together. Toast the peanuts until fragrant, then crush them lightly.

Mi Quang is best served with a side of fish sauce mixed with chili and garlic to bring out its rich flavor.
