Needed something quick for lunch so these were the ingredients I had to hand. Simple and quick.

Needed something quick for lunch so these were the ingredients I had to hand. Simple and quick.
Steps

Prepare the vegetables.

In a frying pan or wok heat the rapeseed oil and add the meatballs and cook through. Once done transfer to plate lined with kitchen roll.

Add the groundnut oil and add in the onions, leeks and garlic and fry for 5-10 minutes until its just cooked.

Next add in the egg noodles, Season with salt and pepper. Add in the soy sauce and chilli flakes and mix all together. Cook for about another 5 minutes.

Add the meatballs back in and cook for a further two minutes or just enough time to heat the meatballs.
