Add water sugar and lemon zest in non stick pan

Stir until sugar dissolves let it bubble

Sieve the mixture to remove lemon zest

Add in blue berries on gentle simmer

After some time the skin will start falling off

Turn heat to high and let it cook until reduces to almost half

Add lemon juice, stir, let cook a few seconds then remove from heat. You can serve as chunky sauce or sieve for a smoother consistency
