Claypot Rice in Rice Cooker

As its name implies, this rice is cooked in a clay pot and served hot straight from the stove. The rice at the bottom of the pot will form a burnt crust, which makes it so unique. I don’t have a clay pot, so to replicate this at home, I used my rice cooker.
This dish is very simple, everything is cooked in the rice cooker. For the meat, you can use chicken or pork.

Ingredients

4 servings
  1. 300 grrice, rinse a couple times until the water gets clear, drained
  2. 400 mlwater
  3. 3bacon slices, cut to taste
  4. 3lap cheong (chinese sausage), sliced
  5. 2 tbssesame oil
  6. 4garlic cloves, minced
  7. 2shallots, finely chopped
  8. 2 cmginger, grated
  9. 10 grdried shrimp (do not need to be soaked), if the size is large, chop them
  10. 1 tbsoyster sauce
  11. 1 tbsdark soy sauce
  12. 1 tspsalt
  13. 1 tspsugar
  14. to tasteground black/white pepper
  15. Frozen vegetables as needed (optional)

Steps

  1. 1

    Add sesame oil in the rice cooker pot. Close the lid. Press the "cook" button. Wait until the oil gets hot.

  2. 2

    When the oil is hot, add garlic, shallots and ginger. Saute until fragrant and wilted.

  3. 3

    Press the "off" button. Add rice, water and all remaining ingredients plus seasonings, except frozen vegetables. Stir it.

  4. 4

    Close the rice cooker, press the "cook" button and wait until it turns to "warm". Add frozen vegetables. Mix it up. Close the lid. Leave it in the "warm" button for 5-10 minutes then serve.
