Thoroughly wash and shred just the white and light green part of the leeks, discard the rest

Dice the potatoes into 1 inch pieces

Layer first the potatoes, then the leeks, then the spices into the crockpot then pour chicken stock over all of it.

Set the crockpot for 6-8 hours on low

The last hour, heat up 1 tbsp of vegetable oil in a saute pan, and fry the kolbasa until edges turn brown. Add to crockpot and finish cooking.

Using an immersion blender, blend soup until smooth.

Stir in grated cheese and stir until well blended into soup. Serve and Enjoy!!!
