Yolks and Celery Stir-Fry

My goodness, so many cracked eggs! I was devastated when I asked somebody to get the eggs for me and about 1 kg of the eggs cracked. But hey, no use crying over cracked (or broken) eggs. I decided to turn them into something tasty. Why so many yolks? Because the eggs have two yolks in them. I think for this recipe, I used yolks from about 10 broken/cracked eggs. You can use whole eggs for this one. Poach them one by one first until they're a bit firm.

Ingredients

  • 20yolks
  • 1/2onion
  • 1/2 tspcelery salt
  • 1/4 cupchopped celery
  • 1/2 tspsugar
  • 1 tspoil
  • Water for boiling

Steps

    Boil about 2 cups of water. I used a pan because I felt it was easier to scoop the yolks later. Add the yolks, one by one. After five minutes, carefully take out the yolks and set aside.

  2. 2

    Heat the oil in a pan. Add the sliced onion and stir. Add celery and the condiments, stir from time to time.

  3. 3

    After a minute or so, add the yolks. Flip the yolks after a couple of minutes. You can eat this with rice or mash it with mayo for sandwich filling.
