Steps
- 1
Place the cleaned, peeled shrimp in a hot skillet with the butter. Sauté until they turn pink.
- 2
Once cooked, remove the shrimp from the skillet and reserve the liquid they release.
- 3
Add a little more butter to the skillet and sauté the pineapple until lightly browned. Once the pineapple is ready, return the shrimp to the skillet.
- 4
Blend the garlic with a little orange juice and the chicken bouillon. Add this mixture to the shrimp and let them absorb the flavor. (I use a mortar and pestle to blend well.)
- 5
Blend the chiles with the remaining orange juice, ketchup, tamarind concentrate, and black pepper to taste.
- 6
Add the sauce to the shrimp and let it simmer for a few minutes. If the sauce is too thick, add some of the reserved shrimp liquid.
- 7
Serve with white rice and a salad of carrot, apple, onion, and lettuce with a little mayonnaise and sour cream.
- 8
And enjoy with a whiskey on the rocks!
