Steps

First of all wash arbi roots and pressure cook for 3-4 whistles (just like we pressure cook potatoes)

Let them cool and remove peels, later mash them in uniform mixture

In a mixing bowl take chana dal flour, mashed arbi roots, maida and 4 to 5 tablespoons of oil

Mix well everything properly

Now add turmeric powder, red chilli powder, Ajwain and salt according to the taste

Mix well everything and knead until a hard and uniform dough

Keep it aside covered for 15-20 minutes

Now knead the dough again and prepare small puris of it using oil or some maida for dusting

Allow all the puris to dry up under fan for 15 to 20 minutes

Now heat sufficient oil in a deep pan and deep fry all papariya (3-4 at a time)

Deep fry on low heat until golden in colour

Let them cool completely and then store in air tight container
- 13
