Heat the oil in a pan,add onion saute it for 2 min.then add ginger garlic paste, turmeric, tomatoes,grated coconut, chilli powder, coriander powder,put the lid on and Cook it another 2 min.cool it, put into blender and make a paste.

Heat the oil add mustard seed Fenugreek seeds red chilli,udad daal,curry leaves,add the prepared mixture of onion, tomatoes, coconut,mix this put lid on,Cook for another 5-6 min.add tamarind juice, water,mix it add jaggery,once it comes to boil,add fried baby eggplant,salt,mix it well,

Serve this rice or chapati
