Ingredients

200 gegg whites
400 gcaster sugar
Lemon juice
Water to soften
1 tbspglucose

Steps

Mix together the water and sugar in a saucepan, heat until soft ball stage 118°C
2

Just as the sugar reaches 115°C start whisking the egg whites in the machine

When the egg whites have turned light and white slowly pour the sugar into the whisking egg white
4

Whisk in the lemon juice, continue whisking until cooled pipe out and bake
