Blend together the icing sugar and almonds then pass

Whisk the egg whites until light and slowly add the sugar and continue whisking to a meringue

Fold in the sugar and almonds mix and place in a piping bag
- 4
Pipe out small discs and leave them out to dry a little. Then bake on about 130°C until risen and firm to touch
