  1. 1 teaspoonblack peppercorns
  2. 1 teaspooncumin seeds
  3. 1 teaspoonwhite mustard seeds
  4. 2 teaspoonpaprika
  5. 1 teaspoonchilli powder or cayenne pepper
  6. 1 teaspoondried oregano
  7. 2 teaspoondried thyme
  8. 1 teaspoonsalt
  9. 2garlic cloves
  10. 1onion, sliced

    Dry fry or roast the peppercorns, cumin and mustard seeds over a medium heat to release their flavours.

  2. 2

    Grind the roasted spices to a fine powder, then add the paprika, Chile or cayenne, oregano, thyme and salt and grind again

  3. 3

    If it is to be used immediately, add the spices to the finely chopped garlic and onion in a blender or food processor and process until well combined
