Spinach-pine nuts (palak chilgoza)

Spinach in winter are so fresh and crisp and this recipe is made with the crunch of pine nuts that has rustic taste. There is a mild sweetness of raisins that takes care of mild bitterness of spinach. This recipe is specially made in winter as my kitchen garden grows lots of fresh greens.
A unique recipe that has fresh bread crumbs. It will soon become a regular dish in your kitchen, once you try it.

Spinach in winter are so fresh and crisp and this recipe is made with the crunch of pine nuts that has rustic taste. There is a mild sweetness of raisins that takes care of mild bitterness of spinach. This recipe is specially made in winter as my kitchen garden grows lots of fresh greens.

Clean and wash spinach, use only leaves, roughly chop it. I used some from my kitchen garden.

Break bread slices into pieces, put it in mixer jar, churn and make bread crumbs. Do not grind it too fine. Keep aside.

In a pan heat up oil, add cumin seeds, asafoetida, after few seconds add chopped onions.

Fry till onion start turning brown.

Add raisins and 1/4th cup of water. Let it be for 1 minute.

Add chopped spinach pepper powder, chilli flakes and salt.

Increase the flame, stir and cook until most of the liquid is reduced.

Fry till onion start turning brown.

Add prepared bread crumbs, stir. In few minutes all the water will be absorbed.

It's ready to serve. Sprinkle some chilli flakes and pine nuts. Serve and enjoy.
