Palak Paneer

Take the spinach and wash it properly 3-4 times so that all the dirt comes out. Put it in a cooker and let it whistle upto 4. Do not add water to it as the spinach itself leaves water when cooked. After it is cooked take it out in a plate and let it cool down as shown in the pic.

Take all the spices and dry roast in a pan until it turns golden brown.

Now take a pan and add 2 tbsp oil in it. Add green chillies after making a slit in it, so that it doesn't burst out. Further add the chopped onion and fry it until half cooked. Add chopped tomatoes to it and cook it well. When cooked keep it aside in a bowl and let it cool down. Once it cools add the roasted spices to it and grind it to a fine paste as shown in the image.

Similarly grind the spinach to a fine paste after it is cools down

Take a container and heat 2 glass of water until it comes to a boil. Now take the paneer and cut it in cubes as per your choice. Add some oil in a pan and fry the paneer for 2-3 minutes. Once they are fried add all the paneer in the water to make it soft.

Now add 2 tspn of oil in pan and fry the paste of spices and onion until it starts leaving oil. Add 1/4 tspn of turmeric powder and 1/2 tspn of garam masala powder. You can add red chilli powder too. Further add the spinach paste to it. If required add some water and give it a boil. Once the boil comes add all the paneer and salt as per taste. Cook it for 2-3 more minutes. And now it's ready to be served with roti or butter naan.
