This is a traditional Lenten recipe my mother always makes. Today, I'm sharing our family recipe for Tortitas de Camarón (Dried Shrimp Patties).

Remove the spines from the nopales. Slice them into thin strips to prepare for cooking.

Place the nopal strips in a pot. Add enough water to fill the pot halfway (about 4 cups/1 liter). Season with 3 tablespoons of salt and half an onion, sliced. Cook for 10 minutes.

Separate the egg whites into a bowl. Beat with a mixer until they are foamy and stiff.

Once the egg whites are stiff, add the egg yolks, ground dried shrimp, 1/2 cup water (120 ml), and 1 tablespoon salt. Mix for 4 minutes until well combined.

Once the mixture is well blended, it should look thick and fluffy.

Heat oil in a skillet. Spoon small portions of the mixture into the pan. Fry on both sides until golden, being careful not to burn the patties.

For the sauce: In a pot, add 2 cups (about 1/2 liter) of water. Add the dried California chiles. Cook for 7 minutes.

In a blender, add the garlic cloves and cumin, then add the cooked chiles. Blend until smooth.

Add the cooked and drained nopales to the sauce. Cook for another 5 minutes.

Heat a pot with a little olive oil and a slice of onion. Sauté for 2 minutes. Pour in the blended chile sauce (strained) and 4 cups (1 liter) of water. Cook for 10 minutes.

To serve: Place a layer of nopales on the plate, add the shrimp patties, and pour more sauce over the top.
