The Tale of Two batches of rolls cooked and made the same exact time from the same ingredients. One is dense one is light.

Warm the milk and add the yeast, and sugar. Let it get frothy about 5-10 minutes

Beat the egg and set aside. Get at room temperature.

Add the salt and flour to a bowl form a crater and add the butter, beaten egg, and yeast mixture. Mix well and knead till incorporated well. Batch A

Form a ball and put into a bowl and set in a warm place and let rise for an hour or till it's doubled in size. Poke it. Batch A

Batch B these batches were made splitting the ingredients after being fixed like the yeast mixture to bowls of flour everything the same except I used one brown egg and 1 white egg. Batch B was heavier and denser then batch A. Everything the same from the same bags of flour same can of milk exactly the same. I don't understand it.

Put it on a floured surface. Knead a couple of times. Pinch into 16 pieces for double batch, and roll each into a ball. Place in a baking pan 9x13.

Set aside to rise again for an hour. Preheat the oven 30 minutes before the hour is up.

Preheat the oven to 400 degrees Fahrenheit.

Bake 12-15 minutes in the oven. Take out and brush with butter.

Add a hint of kosher salt to the tops

As the rolls are baking mix the pork with the spices form into patties.

Heat a skillet and fry till done turning as needed.

Bunch the patties to one side.

Add the onion to the pan.

Just before being done add the onions to the drippings add seasoned salt to the onions.

Slice the tomatoes to size of the patties. Slice the pickle into chips.

Add the onions to the top of the patties.

When the rolls are done brush with butter and assemble the sliders. If making the rolls ahead of time separate them to cool faster.

I used mustard and ketchup.

Add the patties with onions atop them.
