Dill! One of my favorite herbs, and I think it goes perfectly in Tzatziki. Tzatziki is a classic appetizer in Greek cuisine. It has Turkish origins, and its name comes from the word cacık. The main ingredient is strained yogurt, to which grated cucumber, minced garlic, dill, and a little olive oil are added.

Ingredients

  1. 2 cupsGreek yogurt (about 500 grams, I use 5% fat)
  2. 1cucumber
  3. 3 clovesgarlic
  4. 1 teaspoonfinely chopped dill
  5. 1 tablespoonvinegar
  6. Olive oil
  7. Salt and pepper

Steps

  1. 1

    Grate the cucumber using the large holes of a box grater.

    Sprinkle the cucumber with salt, mix, and push it to one side of the bowl. Tilt the bowl slightly so the liquid drains to the other side.

    After 5-10 minutes, squeeze the cucumber well to remove excess liquid and transfer it to another bowl. Add the yogurt, minced garlic, olive oil, vinegar, pepper, dill, and just a little salt since the cucumber is already salted.

    Mix well. If you want a thicker dip, add more yogurt. You can also adjust the vinegar or olive oil to taste. For a milder flavor, start with 2 cloves of garlic and add more if you like.
