Ingredients

  • For one serving:
  • 1/3 cuprice (about 80 grams)
  • 3/4 cupvegetable broth (180 ml)
  • 1.75 ozItalian sausage, casing removed (about 50 grams)
  • 1.75 ozcremini or white mushrooms, sliced (about 50 grams)
  • 1 1/2 tablespoonscream cheese (about 20 grams)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, to taste

Steps

  1. 1

    Brown the crumbled sausage, with the casing removed, in its own fat without adding oil or butter.

  2. 2

    Add the mushrooms and rice.

  3. 3

    Toast everything for one minute, season with salt, and start adding the broth a little at a time.

  4. 4

    When the broth has been absorbed and the rice is al dente, turn off the heat.

  5. 5

    Stir in the cream cheese to make the risotto creamy, mix well. Add black pepper and fresh parsley.
