Pineapple Bomb
For this recipe I wanted something sweet that brought a nice heat also and I already knew I wanted to include pineapple and smoked sausage. It took a few experiments before finally developing this one. I do add caramelized onions on my kids' sandwiches because I've noticed that it seems to lessen the heat some, but I like a strong heat so this recipe does not include the caramelized onions. If you want less heat I suggest adding them. This is a very easy recipe that I've gotten lots of compliments on. Enjoy!

Chocolate Coconut Bark (Cocada)
This is a modification of a Cocada recipe from MARÍA DEL MAR SACASA of Serious Eats. The addition of chocolate was supposed to make it a chocolate chip cocada, but all the chips melted (you'd think I would've expected that). The result is a chewy, fudgy brownie like coconut bar thing. What a delicious mistake.

Here's another one for her!Don't put too much cocoa in the dough as it burns easily (I use 10g).If you flatten the cookies too much, they will burn easily, so make them on the thick side.
