Steps

First we have cut ghobi, and kathal and green chilli

Then boil the water in a pan add add chopped gobhi and kathal boil it for 5 min in high flame then remove excese water and cool it down

Then keep it in a under for sun dry for completely soaked water from the kathal and gobhi

When water is there achar will get spoil in 2-3 days only

Aftar that take a pan add all whole masala like fennel seed,mustard seed,cumin seed,coriander seed, fenugreek seed roast all the whole masala then Grind it make coarse powder not fully fine one

Then in a same pan add Oil when oil is hot add kathal, Gobhi and green chilli mix it well stir fry for one min in medium flame then add all masala powder along with turmeric, red chilli and salt

After cool down add vinegar or lemon juice mix it well achar is ready store in a jaar

Keep this achar in a sun dry for 3-4 day to observe all the spicies after that u enjoy this achar

For longer storage of this achar fill jaar with mustard oil

You can make kathal and gobhi without boil also

You can fry kathal and gobhi till soft in medium flame
