When its soft, turn off heat and leave yam in oil for 5mins so that it will soak little oil.

Peel, wash, sprinkle salt and fry Yam on low heat till soft so that it won't become dry and crisp. I also sprinkle water while frying so it will fry slowly.

Bring out mash with hand or turning stick. Do not over mash.

Sprinkle salt and chilli pepper on it then drizzle oil a little. At this point if oil did not soak in to your taste you can drizzle more oil and its ready to eat.

When mashed it can also be served with stew, sauce etc
