Preheat oven to 180°C. Grease a baking tin (9") and dust with flour.

Beat the sugar and Margarine until pale and fluffy. Add in the eggs one at a time beating well to incorporate air.

Add in the essence and mi well. Using a spatula, fold in flour until just mixed.

To this batter, add and fold in ½ cup passion fruit pulp until well mixed. Pour the batter into prepared tin and bake in preheated oven for about 45 mins or until a skewer inserted comes out clean

Cool in the tin for abt 10 mins then place on rack to cool completely.

For the syrup, heat water and sugar as you stir until it reduces, add the pulp and mix well. Cool completely before using it to torte your cake and as a topping, together with whipped cream.
