Ingredients

4 servings
  1. 3-4big potatoes
  2. 1/2 cuproughly chopped cashew nuts
  3. 1/4 cupraisins
  4. 3 tbspsoil
  5. 1 tspcoarse pepper powder
  6. 1 tspcumin seeds
  7. 1 tbspsesame seeds
  8. 1/2 cupchopped fresh coriander
  9. 10-12curry leaves
  10. 2green chillis chopped into rings
  11. 1 tspsugar
  12. 1-1 1/4 tspsalt
  13. 1-2 tbsplemon juice

Cooking Instructions

    Boil the potatoes. Peel and let them cool down.
    When the potatoes are cold, cut them into big chunks.

    In a tiny bowl mix cashew nut pieces and raisins.

  3. 3

    In another tiny bowl mix coriander, chillis and curry leaves.

  4. 4

    In a third bowl mix sesame seeds, cumin seeds and pepper.

    Heat oil in a wide pan over medium heat.

  6. 6

    When it is hot add the sesame seed mixture. Stir fry for a few seconds.

    Add the cashew nut and raisin mixture. Stir fry till the raisins begin to plump up.

    Add the coriander mixture, stir fry for 30 seconds.

  9. 9

    Add the potato cubes, salt and sugar.
    Mix gently. Lower the heat and let the potatoes get hot. Stir gently occasionally.

    Add lemon juice, mix and serve.

    Tips: Can use baby potatoes. Add roasted peanuts instead of cashew nuts.
