Maamoul are stuffed shortbread pastries very popular in Levantine countries. Normally they are stuffed with dates, pistachios or walnuts. I have made dates Maamoul.

Maamoul are stuffed shortbread pastries very popular in Levantine countries. Normally they are stuffed with dates, pistachios or walnuts. I have made dates Maamoul.
Steps

Melt ghee and let it come to room temperature.

Add ghee and oil to semolina.

Mix it nicely and rest overnight.

Add flour, milk powder, sugar powder to it.

Add milk, vanilla essence, nutmegpowder and yeast dissolved in warm water.

Mix it nicely. And knead to dough. Rest it for an hour.

Deseed dates. Grind it in a mixture

Add oil to paste. Mix thoroughly.

Make balls from dough as well as stuffing.

Take dough ball. Make hole with thumb. Stuff date ball. Close it nicely.

Make thumb impression and keep all biscuits ready.

Bake it at 180 for 20 minutes.

Cool warm Maamoul. Garnish with pistachio powder and enjoy with tea/coffee.
