Steps

Grind coconut until it become fine paste.

Take pan and heat ghee in it. Add our coconut paste and cook it until it gets dry.

Now add sugar and cashew powder. This will help as binder. Cook them until ghee gets separated from mixture.

Take baking tray and grease it with small amount of ghee.

Spread our ready mixture evenly and let it get set for atleast 5-6 hr. Make small square pieces of it and serve.

As We have used tender coconut it won't get hard. So it's recommended to store it in refrigerator.

You can make this barfi even with dry coconut.
