You can decide to stuff your plantain with any sauce of your choice. I wanted this. This recipe is quite nice because you don't have to stress yourself to eating it. Just cut and eat at a time.

You can decide to stuff your plantain with any sauce of your choice. I wanted this. This recipe is quite nice because you don't have to stress yourself to eating it. Just cut and eat at a time.

Roast the plantains on each side in the oven for 15 minutes

Wash and slice the Tomatoes, peppers and onions...

Place a clean pan on heat, add the vegetable oil, sauté the onions, add the tomatoes and peppers.
Allow to steam for some minutes.
Add seasoning cubes.. - 4
Break the eggs in a bowl and whisk.
Add the whisked eggs to the tomatoes mix and stir at intervals. Until cooked. Add the pumpkin leafs and stir, before dropping from heat.. - 5
Remove from heat and slit a shallow opening in the centre of the plantains.
Use a tablespoon to stuff up the opening with the egg sauce..
