Plantain fritata

This is an amazing meal and highly nutritional. #Plaintainrecipecontest
Steps

Peel your plantain and cut into slices, sprinkle little amount of salt and deep fry it. Set it aside

In a pan,add in 3tbsp of vegetable oil, allow to heat. Add your diced onions, grated scotch bonnet, red and green bell pepper. Stir for few minutes, then add in your boiled dice potatoes,carrots and peas.

Stir for few minutes, arrange some of your plantain on top of the stir fry veggies, pour in your egg mixture. Then arrange the remaining plantain onto the egg mixture. Cook on low heat. Garnish with red and green bell pepper. 😋 NB: you can also bake it if you want
