Ingredients

  1. 400 gramwhite onions
  2. 1dollop of unsalted butter
  3. 300 mlvegetable/chicken stock
  4. as neededMixed Herbs
  5. 1Bay leaf
  6. to tasteSalt and crushed black pepper to season
  7. 300-350 gmgrated gruyere/parmesan cheese
  8. SlicesFrench Baguette to top
  9. 2 tablespoonplain flour
  10. 1 tablespoonApple cider vinegar/1.5 tablespoon white wine

Steps

    Peel and slice the onions thin and lengthwise

  2. 2

    Melt the butter in a pot

  3. 3

    Add and sauté the onions on low heat

  4. 4

    Keep stirring in between as the onions brown to avoid burning them

  5. 5

    Meanwhile, bring the stock to a boil in another vessel and add the herbs and Bay leaf

  6. 6

    Strain the stick after 3-4 minutes

  7. 7

    Once visibly brown, add the flour and mix for a few seconds

  8. 8

    Next goes in the cider vinegar/ wine

  9. 9

    Add and sauté the onions for a few seconds

  10. 10

    Add the stock and bring to a boil

  11. 11

    Reduce heat and allow the soup to simmer while you season it with salt and pepper

  12. 12

    Mix and take off heat

  13. 13

    Spoon the soup equally into oven safe bowls

  14. 14

    Top with baguette slices and spread a generous amount of cheese covering the surface well

  15. 15

    Microwave till the cheese melts / even browns a bit

  16. 16

    Let the bowl cool off slightly till you can handle it

  17. 17

    Serve while the soup is warm. Enjoy!
