Add all marinade ingredients to a pot (reserve 1/2 cup Shaoxing wine for later). Bring to a boil for 1 minute, then turn off the heat and let cool.

Trim the sharp tips and long whiskers from the shrimp heads.

Fill a large pot with water, add the green onion, ginger slices, and salt, and bring to a boil.

Once boiling, add the rice wine, then add the shrimp. Bring back to a boil.

As soon as it boils again, turn off the heat, cover, and let sit for 1 minute.

Add ice cubes to the cooled marinade. Quickly transfer the cooked shrimp into the marinade, add the reserved Shaoxing wine, and chill in the refrigerator.

Chill for about half a day, then serve.

Mrs. Chen’s Tips: 1. If you prefer a lighter alcohol flavor, add all the Shaoxing wine in step 1 and boil together. For a stronger flavor, add more wine in step 5. 2.
