Ingredients

20 minutes
Serves 6 servings
  1. 20large raw shrimp
  2. 6 slicesginger
  3. 1 stalkgreen onion
  4. 2 tablespoonsrice wine (about 30 ml)
  5. 1large pot water
  6. Shrimp Marinade
  7. 1 1/2 cupswater (about 360 ml)
  8. 1 cupShaoxing wine (about 240 ml)
  9. 6dried red dates
  10. 4 slicesastragalus root
  11. 1 sliceangelica root (dang gui)
  12. 1 tablespoongoji berries
  13. 1 teaspoonsalt
  14. 1/2 cupice cubes (about 120 ml)

Steps

20 minutes
  1. 1

    Add all marinade ingredients to a pot (reserve 1/2 cup Shaoxing wine for later). Bring to a boil for 1 minute, then turn off the heat and let cool.

    Trim the sharp tips and long whiskers from the shrimp heads.

    Fill a large pot with water, add the green onion, ginger slices, and salt, and bring to a boil.

    Once boiling, add the rice wine, then add the shrimp. Bring back to a boil.

    As soon as it boils again, turn off the heat, cover, and let sit for 1 minute.

    Add ice cubes to the cooled marinade. Quickly transfer the cooked shrimp into the marinade, add the reserved Shaoxing wine, and chill in the refrigerator.

    Chill for about half a day, then serve.

    Mrs. Chen’s Tips: 1. If you prefer a lighter alcohol flavor, add all the Shaoxing wine in step 1 and boil together. For a stronger flavor, add more wine in step 5. 2. Turning off the heat and letting the shrimp sit for 1 minute after boiling helps prevent overcooking. Enjoy quality family time with Mrs. Chen’s recipes!
