Gougères with Bacon and Gruyère

In a saucepan, heat the water, salt, and butter. Wait until the butter has melted and the mixture is hot.

Remove from heat and add all the flour at once. Stir with a wooden spoon, then return to low heat for about 1 minute to dry out the dough.

Transfer the dough to a cool bowl. Add the eggs one at a time, mixing well after each addition. Once fully incorporated, stir in the bacon and grated cheese.

Using two tablespoons, form small mounds of dough and place them on a baking sheet.

Bake for 30 minutes at 350°F (180°C). VERY IMPORTANT: Do NOT open the oven during baking!
