Ingredients

Makes 26 large gougères
  1. 1 cupwater (250 ml)
  2. 7 tablespoonsbutter (100 g)
  3. 1 cupall-purpose flour (150 g)
  4. 5 ozbacon, diced (150 g)
  5. 1/3 cupgrated Gruyère cheese (10 g)
  6. 4eggs
  7. Salt, to taste

Steps

  1. 1

    In a saucepan, heat the water, salt, and butter. Wait until the butter has melted and the mixture is hot.

  2. 2

    Remove from heat and add all the flour at once. Stir with a wooden spoon, then return to low heat for about 1 minute to dry out the dough.

  3. 3

    Transfer the dough to a cool bowl. Add the eggs one at a time, mixing well after each addition. Once fully incorporated, stir in the bacon and grated cheese.

    Using two tablespoons, form small mounds of dough and place them on a baking sheet.

    Bake for 30 minutes at 350°F (180°C). VERY IMPORTANT: Do NOT open the oven during baking!
