Caldo de Pollo (Red Chicken Soup)

Gather all the ingredients. Bring about 3 quarts (3 liters) of water to a boil with salt and dried oregano. Once boiling, add the chicken. When it comes back to a boil, skim off the foam that forms on top. Meanwhile, cook the chiles, tomato, onion, and garlic for 10 minutes.

Peel and cut your vegetables. After 40 minutes of boiling the chicken, blend the chiles, garlic, onion, and tomato with 1 cup of water. Strain and add this mixture to the broth. Let it cook for 10 minutes, then add the carrots, potatoes, and chayote.

After 10 minutes, add the zucchini and broccoli. Cook for another 5 to 8 minutes, then turn off the heat. Serve with lime and enjoy—it's delicious!
