  • 2 cupslong-grain white rice (about 400 grams)
  • 4large tomatoes
  • 1/4small onion
  • 1large garlic clove
  • 4 cupschicken broth (about 1 liter)
  • 1 quartwater (about 1 liter)

Steps

    Bring 1 quart (about 1 liter) of tap water to a boil.

    Add 2 cups of rice and let it soak for 10 minutes.

    Drain the rice in a strainer and rinse three times with cold water. Shake off excess water well. Let it rest for five minutes.

    Wash the tomatoes and make a small cut in each. Add the 1/4 small onion and the peeled garlic clove.

    Microwave for 4 minutes (1 minute per tomato).

    Heat oil in a large nonstick skillet.

    Drop a grain of rice into the oil; if it bubbles, the oil is ready.

    Spread the rice evenly across the skillet to form a thin layer.

    Don’t stir too much to avoid breaking the rice, but at first, make sure all the rice is coated with hot oil. If the rice clumps, add another teaspoon of oil. Cook over medium heat, stirring every two minutes or so.

    Remove the tomatoes from the microwave and cut them again. Microwave for another minute.

    Gently scrape the edges of the skillet from the outside in to form another even layer of rice.

    Blend the microwaved tomatoes.

    Add chicken broth to the blender until you have 4 cups (about 1 liter) of liquid total (2 cups of rice need 4 cups of liquid).

    When the rice is golden, pour the blender contents into the skillet.

    Pour through a strainer.

    Increase the heat to bring to a boil. Add 1 cup of frozen mixed vegetables.

    When it boils, reduce the heat and cover.

    Uncover, stir occasionally, and cover again. Taste and add salt if needed.

  19. 19

    Remove the stems from 4 serrano peppers (2 per cup of rice) and place them in the rice to cook and add flavor.

  20. 20

    Taste the rice; when it’s tender, turn off the heat and leave covered.
