Turkey Chili Stuffed Potatoes

I used cheese and hot sauce as a topping in this recipe. But in the past I have also used avocado, black beans, corn, sour cream & pickled jalapeño slices. This is not a traditional "wet" chili, I do not want the potato soggy. But if you want it "wetter", then add a small can of tomato sauce.

Ingredients

  1. 2lbs. Lean Ground Turkey
  2. 1 C.Onion, chopped
  3. 2 tsp.Garlic, minced
  4. 1 (14 oz)Can Diced Tomatoes (do not drain)
  5. 1 tsp.Salt
  6. 2 tsp.Chipotle Chili Powder
  7. 2 tsp.Ground Cumin
  8. 1 tsp.Smoked Paprika
  9. 1 1/2 C.Non-Fat Shredded Cheddar Cheese
  10. 6Russet Potatoes, baked
  11. Hot Sauce, if desired

Steps

  1. 1

    In a large skillet, cook onion and garlic for 3-4 minutes.

  2. 2

    Add ground turkey, cook, breaking up while it browns.

  3. 3

    When turkey is almost cooked through, add spices and diced tomatoes.

  4. 4

    Let finish cooking and simmer for 15 minutes.

  5. 5

    Open up the potatoes lengthwise, divide chili among the potatoes. Top each with ¼ C. of cheese and a few dashes of hair sauce, if using.
