Moist Orange & Lemon cake | Sweet orange & tangy lemon, Match made in heaven
Winter season is blessed with citrus fruits and my personal favorite is sweet orange but no one can deny the love for tangy lemons as well. I wanted to use the best of both, sweetness of oranges and tanginess of lemons. So here i am with my experimental recipe of Moist orange & lemon cake with orange & lemon syrup and orange & lemon glaze on top. Trust me, cake came out out so good that i may not be able to explain in words here. All i can say, that it is a match made in heaven. This recipe is must try!

Steps
- 1
Beat room temperature butter with sugar using electric beater till light and fluffy (approx 3-4 min). And then incorporate eggs (1 at a time).
- 2
Now add orange zest, thick yogurt (or sour cream) & orange+lemon juice in the mixture. Sugar & butter mixture will curdle the moment you add zest, yogurt & juice. Don't worry, it is normal. It will be OK after you add flour in it.
- 3
Sift refined flour, salt & baking soda together and then start adding flour mixture and milk in the sugar & butter mixture in installments. Fold everything well together using spatula. Finally, use electric beater for 20 seconds to mix everything well.
- 4
Preheat your oven on 170 degree Celsius and pour prepared batter in the 9 inch round baking pan. Ensure to line your baking pan with butter & parchment paper. Bake your cake for approx 50 min on 170 degree Celsius. Do check your cake after 45 min by inserting a tooth pick and if it comes out clean, you are good to go.
- 5
When cake is out of oven, let it cool down for 15-20 min and prepare for orange & lemon syrup in the meantime. Mix granulated sugar with orange & lemon juice and bring it to the boil. Ensure sugar is dissolved completed. Now pour this syrup on your warm cake. cake will absorb all the syrup and become super moist.
- 6
Last & final step is glazing the cake. For glazing, You will have to wait till the time cake is completely cool. Mix 2 tablespoon Orange & lemon juice in 1 cup of icing sugar and mix well to ensure no lumps and then pour this glaze on top of your cake.
- 7
Moist orange & lemon cake is ready, decorate with orange zest and freshly cut orange slices before serving.Enjoy!
