Heat oil or ghee in a skillet. Add cumin seeds, green chilies, and ginger, and sauté for 1 minute.

Add all the spices except salt and garam masala, then add the chopped tomatoes. Cook until the oil separates.

Add the grated paneer and mix well. Sauté for 2 minutes.

Add salt, garam masala, and chopped cilantro. Mix well.

Serve the hot paneer bhurji with roti, naan, or paratha.
