Ingredients

  1. 1.3 lbspork chops with a fat rim, about 1/2 inch (1.5 cm) thick (choose pieces with a soft end and a layer of fat on the edge; thick cuts are best for grilling and stay juicy)
  2. For the marinade:
  3. 1 tablespoonsoy sauce
  4. 2 tablespoonshoney
  5. 1 tablespoonsweetened condensed milk
  6. 1 tablespooncola
  7. 2 tablespoonsoyster sauce
  8. 1 tablespoonchili sauce
  9. 1 teaspoonsesame oil
  10. 1 tablespoonfish sauce
  11. 3 tablespoonsfinely minced lemongrass
  12. 1little garlic, shallot, chicken bouillon powder, and ground black pepper
  13. For the dipping sauce: Mix fish sauce, sugar, and water in a 1:2:2 ratio. Combine in a saucepan, bring to a boil, then let cool. When ready to serve, add fresh lime juice and minced garlic and chili for a beautiful, flavorful sauce
  14. Scallions + rendered pork fat or vegetable oil + a pinch of salt for scallion oil
  15. Cucumber, tomato, and pickled vegetables for serving

Steps

    Rinse the pork chops and pat them dry with paper towels.
    - Lightly tenderize the pork with a meat mallet.
    - Add all the marinade ingredients to the pork. Put on gloves and massage the marinade into the meat until well coated. Marinate for 1–2 hours, or overnight for best flavor.

    After marinating, place the pork chops on a grill rack. I use a convection oven at 350°F (180°C) for 15 minutes. Flip the pork, brush with leftover marinade, and grill for another 10 minutes until done. (Tip: If you have a charcoal grill, the flavor will be even better!)

    Slice the tomatoes and cucumbers.
    - Microwave the scallion oil mixture for 30 seconds until fragrant.
    - For the dipping sauce: Mix fish sauce, sugar, and water in a 1:2:2 ratio. Bring to a boil, let cool, then add fresh lime juice and minced garlic and chili right before serving for a vibrant look and taste.

    Pack cooked rice into a small bowl, then invert onto a plate for a nice presentation. Drizzle with scallion oil. Add sliced cucumber, tomato, and grilled pork chop. (A little pickled vegetables on the side makes it even tastier.) Enjoy!
