When it comes to broken rice, Saigon is number one! The pork chops are carefully marinated to infuse every bite with rich flavor. For those who don’t like eating around bones like with spare ribs, pork chops are the perfect choice. Let’s get cooking!

Rinse the pork chops and pat them dry with paper towels.
- Lightly tenderize the pork with a meat mallet.
- Add all the marinade ingredients to the pork. Put on gloves and massage the marinade into the meat until well coated. Marinate for 1–2 hours, or overnight for best flavor. - 2
After marinating, place the pork chops on a grill rack. I use a convection oven at 350°F (180°C) for 15 minutes. Flip the pork, brush with leftover marinade, and grill for another 10 minutes until done. (Tip: If you have a charcoal grill, the flavor will be even better!)

Slice the tomatoes and cucumbers.
- Microwave the scallion oil mixture for 30 seconds until fragrant.
- For the dipping sauce: Mix fish sauce, sugar, and water in a 1:2:2 ratio. Bring to a boil, let cool, then add fresh lime juice and minced garlic and chili right before serving for a vibrant look and taste. - 4
Pack cooked rice into a small bowl, then invert onto a plate for a nice presentation. Drizzle with scallion oil. Add sliced cucumber, tomato, and grilled pork chop. (A little pickled vegetables on the side makes it even tastier.) Enjoy!
