A traditional Algerian dish that can be served in many ways, always delicious with a wonderful flavor.
Steps

Rinse the mesfouf (fine couscous) twice and let it dry. Wash the apricots and prunes, then soak them in warm water.

Toss the mesfouf with a little oil, then steam it. Once it starts steaming, add a pinch of salt and a little more oil, sprinkle lightly with water (don’t add too much so it doesn’t get mushy), and let it absorb.

Chop the apricots into small pieces and place them at the bottom of the steamer basket. Add the mesfouf on top and steam again.

When it steams, sprinkle with a little more water and let it dry out.

Steam it one more time. When ready to serve, steam it a final time, then add the butter, granulated sugar, and powdered sugar. Garnish as you like, or serve plain with buttermilk or yogurt.

Steam the prunes separately and use them for garnish.
