Ingredients

  1. Patty Pastry
  2. 8 ozAP Flour
  3. 1.5 tspturmeric
  4. Pinchsalt
  5. 4 ozcold cubed butter
  6. 4-5 tbspwater
  7. 1egg beaten (egg wash)
  8. Veggie Filling
  9. 1/3 cupveggie stock (optional)
  10. 1/2cabbage thin sliced
  11. 1/2onion thin sliced
  12. 1/2 cupFrozen peas and corn
  13. 1/2 cupbroccoli
  14. 1/2 cupshredded carrots
  15. 1/2 tspminced hot pepper(optional)
  16. 1 tspcinnamon
  17. 1.5 tspsalt
  18. 1.5 tsppepper
  19. 1 tspgarlic powder
  20. 1/2 tspcayenne pepper

Cooking Instructions

    Okay so for time management sake. Slice and prep all the veggies for the filling. Set aside. Time to make the patty preheat oven 350 f

    In a large bowl whisk together all dry Ingredients (flour, turmeric, salt) set aside

  3. 3

    Now heat a large pan add a little vegetable oil. Add veggies and spices. Cook down until tender and aromatic. Set aside let cool

    Grab the bowl of dry ingredients and add the cubes of butter. With gloves or however you prefer, Start combining the butter until it starts to form a dough. Add water one tbspn at a time

    Roll out dough on clean counter top add some flour if you need. Roll it out to less than 3/4 inch to prepare for circle molds or by hand

    I did mine by hand. You can roll yours out thinner. Not too thin though. Try to make them all the same size if cutting by hand

    Now! Adding the filling. Once filling is cooled to touch, add a small spoon full and place on one half of precut circles. Fold over other half and seal with fork around the edge. Do the same for remainder of dough

    Place on lined sheet pan and brush a little egg wash on the tops off each patty. A Sprinkle of salt on top won’t hurt either 😊 place in oven. Bake until golden and beautiful. I say 10-25 min. Check and rotate after 10 mins Enjoy the flavors

Hi Leann, great recipe! I'm going to share it with my mom because they discontinued her favorite flavor of hot pocket sandwich. I did make some changes, I left out the cabbage, onion, peas, corn, broccoli, and carrots, and added some deer sausage to give it a more hearty flavor. The one thing I didnt like about your recipe is that the bottoms got very soggy from the sausage grease drippings. Also, they didn't get as golden brown as your photos indicate, but that might be because I didnt brush them with egg because it's cruel to force an animal to give birth every day just so you can eat its period. Anyway, thanks for making delicious options for vegans like me and my mom. It's hard to find foods that replace the heartiness of meat
