Take a bowl and add flour, and salt to it.now slowly add water to it and form a dough.

Keep it aside and prepare the stuffing

For stuffing, heat a pan and add oil to it. now add jeera and chopped onion and saute well

Add to it green chilli and ginger and grated carrot

To the mixture add salt, red chilli powder,khatai and mix well making sure that water does not remain in the carrots

At the end add chopped coriander to the mixture..Now your stuffing is ready.Allow it to cool completely

Make small balls out of dough and flatten a little making space for the stuffing

Take a small amount of stuffing and place on the flattened dough.now seal the stuffing with the dough properly

Dust the stuffed dough with flour.flatten the dough a little with your fingers so that the stuffing is spread all over.Use a rolling pin (i.e belan) and roll the dough in medium size paratha

Heat a tava and grease it with oil or ghee..Place the paratha on tava and cook it well on medium low flame.flip over and cook the other side well

Your yummy carrot paratha are ready to serve with pickle or curd or raita. Parathas tastes best when served hot.
