Heat the ghee in a pan, add the carrots and saute on a medium flame for 5 minutes, while stirring continuously. Add the sugar, mawa and cardamom powder mix well and cook for 2 min.

Now, add the milk, mix well and Cook until all milk is absorbed and mixture turns thick. Stir ocassionally in between. Add the raisins, almonds, cashews and cook the gajar halwa for another few minutes.

Serve the gajar halwa hot.
