Ingredients: 2 lbs whole baby potatoes; 16 oz fully cooked sausage, sliced into 1 inch chunks; 2 small yellow onions, cut into chunks; 2 bell peppers, thickly sliced (any color); 1 can diced tomatoes; 1 teaspoon salt; 1 teaspoon minced garlic; 1 teaspoon Italian Seasoning; 1 cup broth (I used a 1 1/2 cup because I had more potatoes)

1 candiced tomatoes
1 teaspoonsalt
1 teaspoonminced garlic
1 teaspoonItalian Seasoning
1 cupbroth (I used a 1 1/2 cup because I had more potatoes)

Steps

Add everything into the crock pot.
Cover and cook on low for 8 hours or cook on high for 5 hours. (until potatoes and onions are tender).
Serve immediately

Notes- I made this in an pressure cooker/instant pot..... I did it on hi for 15 or 20 mins can’t remember, with a quick release.
