Mexican Nachos 🇲🇽

Heat a little oil in a skillet and sauté the sliced roasted peppers until soft. Pour in some of the pickling liquid from the jalapeños to add flavor. Cook until the liquid evaporates, then set the peppers aside.

Spread the tortilla chips on a large baking dish. Cover with the refried beans, then sprinkle the jalapeños and roasted peppers on top. Season with salt and pepper to taste. Mix the cheeses together and sprinkle evenly over the chips.

Bake the nachos in a preheated oven at 400°F (200°C) for 5 to 8 minutes, or until the cheese is melted and bubbly. Alternatively, microwave until the cheese is fully melted. Serve immediately.
