Ingredients

  • 1 poundVavaldi potatoes cut into cubes
  • 1/4 cupMayo
  • 2 stalkscelery sliced
  • 1/2finely chopped purple onion
  • 1 tbspfennel
  • 1 tbspdill
  • 4 tbspchicken broth
  • 1 tspgarlic powder
  • to tasteSalt and pepper

Steps

  1. 1

    Cooked potatoes for 15 minutes or until tender

  2. 2

    Mix remaining ingredients in bowl

  3. 3

    Drain potatoes and add to bowl

  4. 4

    Stir until potatoes are evenly coated.

  5. 5

    Serve warm or refrigerate for several hours and serve cold.
